What is Marzipan?

Marzipan is a confection consisting primarily of sugar, honey and almond flour, sometimes augmented with almond oil or extract.

Ingredients 

180g Almond Flour
140g Sugar and Crumbs Cherry Bakewell Natural Flavoured Icing Sugar 
40ml Water or Liquid Sweetener. We used Agave Nectar 
1/2-1 Tsp Almond Extract (optional)
1 Tsp Rose Water (optional)
 
 
 
 
Instructions
 
  1. Put the Almond Flour and Natural Flavoured Icing Sugar into the food processor and blitz until it is combined and smooth.
  2. Add the water or the liquid sweetener, (almond extract  and rose water optional )
  3. Pulse the mixture a few times until the dough starts to hold together. Then by hand mould the dough together into a ball.
  4. If the dough is too dry and doesn’t hold together, add a tiny bit more water or syrup if used until the dough is formed.
  5. Knead the marzipan ball on a clean surface for 30 seconds. Shape into a log , wrap it in clingfilm and refrigerate as this will firm it up slightly.
  6. If you use the Agave Syrup you will be able to store in the refrigerator for up to 3 weeks or 3 months in the freezer. If you use water you should use it within 10 days.
